Kosher Flank Steak, London Broil Recipe

One of the best recipes for the kosher cut, known as flank steak

Is this Herbed London Broil. The flank that comes from the hind of the cow is not a kosher cut of beef, and London Broil is; in many kosher butcher shops and kosher supermarkets, you will find flank steak made out of London broil. It’s basically a London broil cut thin and butterflied.

Other options would come from the same shoulder area as a shoulder steak and be sliced from the central part of the shoulder. It is less appealing and less expensive since it is a little chewier than the meat taken from the top of the shoulder. A “London broil” cut from the neck region, which many butchers call shell steak, would be their third option. The price of this cut reflects the fact that it is a little fattier than the other two cuts.
