Ingredients
10 lb Boneless Prime Kosher Rib Eye Roast
Six garlic cloves sliced
salt to taste
freshly ground black pepper to taste
Half cup mustard Dijon

Step 1
Preheat the oven to 500°F (260 degrees C).
Step 2
Prick slits all over the roast with a small knife.
Insert sliced garlic slivers.
Season the roast with salt and pepper and generously spread with mustard.
Cover and place on a rack in a roasting pan.
Step 3
Roast in a preheated oven for 60 minutes.
Turn off the oven.
Leave the oven closed and unopened for 90 minutes.
The meat’s internal temperature should be at least 140 degrees Fahrenheit (60 degrees Celsius) for medium-rare, or 155 degrees Fahrenheit (68 degrees Celsius) for medium.
