Classic Chuck Eye Delmonico Steak with Homemade Vegan Herb Butter

This recipe is a classic method for preparing a quality world-famous Delmonico steak, first introduced by Delmonico’s Restaurant in New York City in the mid-1800s. By slowly pan-searing the beef until it’s sizzling hot and then topping it with homemade herb butter, you’ll create a restaurant-worthy steakhouse meal right in your kitchen!

The secret to a perfect Delmonico steak is choosing high-quality meat in combination with fresh herbs. Be sure to ask your butcher for a well-marbled chuck eye steak, and don’t skimp on the vegan butter or the herbs! Serve this steak with a simple green salad and roasted potatoes for an extra-special touch. 

Herb butter ingredients:

  • 4 tbsp. (1/2 stick) softened Earth Balance Buttery Sticks
  • 1 tbsp. garlic (minced)
  • 1 tsp. parsley (fresh or dried)
  • 1 tsp. basil
  • 1 tsp. black pepper

Herb Butter Preparation:

  1. Blend herbs and dairy-free butter in a food processor or blender until smoothly combined
  2. Transfer the butter onto a sheet of plastic wrap and somewhat flatten or mold it into a log
  3. Store butter in the refrigerator until the steaks are ready

Ingredients for steak:

  • 2 chuck eye steaks
  • 1 tsp kosher salt
  • 1 tsp cracked black pepper
  • 2 tsp olive oil


  1. Drizzle the steak with olive oil and sprinkle salt and pepper onto both sides
  2. Preheat your cast-iron skillet on medium heat and sear the steaks on both sides
  3. After searing, reduce heat and cook until the desired temperature is reached
  4. After, remove the steaks and allow them to rest 
  5. While the steaks are resting, add your dairy-free herb butter and allow it to melt
