Ingredients
Gefen Extra virgin olive oil
Unsalted Butter
Milk
Cheese Mix: Cottage cheese or ricotta cheese,
Pre-Shredded cheeses: cheddar or mozzarella or a blend of your choice (if you like lots of cheese)
Seasoning blend: Onion powder, garlic powder, dried parsley, kosher salt & ground black pepper
Oven Ready unbaked Lasagna noodles

Vegetable Mixture
Mushroom
Red Pepper
Yellow Onions
Zucchini or yellow squash 
Fresh cloves Garlic
Fresh Spinach
Pepper flakes optional (if you like it spicy)

Hey there, foodies! This is how our Italian grandma made her vegetable lasagna 

Recipe Instructions 
Step (1)
Slice and Dice all the vegetables 

Step (2)
On medium heat start to sauté those veggies in olive oil until they’re nice and tender, then let that sauce simmer to bring out those unique flavors. Layer it all up and pop it in the oven to bake to perfection.

Stir in butter & milk and simmer for 10 – 20 minutes, stirring occasionally.

Add Spinach to the pot

Layering process: In a 9×13 pan or your preferred baking dish start layering Start with a generous helping of vegetable white sauce across the bottom of your baking dish. Layer OF noodles, followed by Cottage cheese, cheddar or mozzarella. Repeat for a second layer. Top it off with noodles, vegetable white sauce, cheddar or mozzarella for extra cheesy goodness!

Bake the lasagna by covering it with foil and popping it the preheated oven at 375° F for 40 minutes. After that, take off the foil and bake it for another 10-15 minutes until it’s hot and bubbly on the sides and golden brown on top. Yum!
